How about a tomato sauce that you cook? I love this dish and so simple. Let the tomato mixture sit for a hour before the start with hot pasta - to help develop the flavor!

Linguine with fresh tomatoes

2 cups of seeds and chopped tomatoes
1 / 2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, chopped
1 cup firmly packed fresh parsley, chopped
3 tablespoons freshly grated Parmesan cheese
Chopped 3 cloves garlic or to taste,
2 teaspoons salt
Linguini £ 1
Fresh parsley for garnish

Make tomato sauce:
In a bowl, mix all the sauce ingredients and let the sauce to room temperature, covered, at least 1 hour.
In a large pot, bring 5 liters of salted water bring to a boil. Add linguine and stir to prevent sticking to. Return water to boil and cook until the pasta is cooked but firm, about 7 to 10 minutes with gentle stirring. Drain the pasta. Serve with tomato sauce and garnished with fresh parsley.
