They are hollow stainless steel. The proposition that I now plastic handles. It is selling very well, but I'm not sure about the addresses, when it is hot or not.

We have a kitchen aid. Warm but not hot. The reason is that the inclusion of the small surface area of the handle. Lets dispel the heat.
I Trimontina pots and pans made of stainless steel. The handles can be hot, but the quality is what helps to have an oven mitt around.
I have an oven with stainless steel, but had no problems with the heating.
You should exercise caution, they can overheat and catch you by surprise. Just keep one hand on paper towels gloves.
